Chef Jeff Knight began his culinary career the Old School Way, as an apprentice and dishwasher. Beginning in 1988 at The Plaza Club of Colorado Springs, he began to find a love of food and the journey was on its way. Through the mentorship of two very talented local chef’s, Jeff worked his way through the kitchen’s ranks to reach the Sous Chef position. After the club closed in 1993, Jeff was offered a position at The Craftwood Inn, a long time Manitou Springs restaurant that specialized in Colorado Cuisine and featured a Wild Game centric menu. It was here that he was able to find and explore his culinary talents. Shortly after he started, he was offered a Sous Chef position, before eventually becoming the Executive Chef, a position he held for more than a decade. It was under his stewardship that The Craftwood Inn began to receive many high accolades, including Best Fine Dining and Best Colorado Cuisine in the Colorado Springs area several times over. He then took over as the General Manager and continued to work along side some of the Spring’s most talented culinarians both at The Craftwood Inn and other area venues. He has since stepped away from the restaurant life and has embraced a career working in wine as a salesman and a sommelier. He also does private coursed out wine dinners and other catering events, but he most enjoys cooking for his family and friends. His 5-year-old son and 11-year-old step-daughter agree that he makes the best tacos in town.
