Ted has been fascinated with food for over 25 years. Artistic by nature, he was studying for a graphic arts degree when he realized he was more passionate about cooking for his roommates than studying other forms of art. He moved to Vail in 1993 and worked various kitchen jobs, beginning on the line and coming to realize that he had an inborn talent for analyzing flavors and creating inventive combinations with them. After working as a breakfast chef for a private retreat and cooking for everyone from CEOs to a prime minister, Ted took what he credits as the job that most shaped him as a young chef with the Grouse Mountain Grill. He stayed with Grouse Mountain for 10 years, eventually working his way up to Executive Chef, and still considers the owners and previous Executive Chef as his primary mentors in the field. During his tenure Grouse Mountain hosted, among other events, the Bon Appetit Beaver Creek Culinary Festival for several years Ted went on to open the food and banquet facilities for a new hotel in the heart of Vail Village and from there he went on to run a country club restaurant for a brief time. After these two experiences in a more corporate environment, Ted was eager to have more control to create his own stamp on a place. He had long been a fan of Moe’s Original BBQ in Vail and spoke with the founders about opening a restaurant in Fort Collins. Moe’s Fort Collins opened in January of 2010. It offers a variety of authentic and delicious barbecue dishes and daily specials to the Fort Collins community, and is also known as a gathering spot for locals and visitors alike. Ted has found that Moe’s has given him the ideal combination of freedom and structure; he thrives on creating Moe’s everyday fare, but has enough time and creative energy to devote to special events. His multi course pairing dinners, which he offers once a month under the Full Pull Supper Club banner, meet with breweries’ and patrons’ unanimous acclaim and are known for elevating both food and craft beer in a 1+1=3 equation. Ted has had recipes published in Bon Appetit magazine and several cookbooks. Although preparing one-of-a-kind beer dinners and special events with Full Pull and owning Moe’s Original BBQ – Fort Collins keeps him busy, his mind is always percolating on the next culinary adventure.
