Chef Mike Fortin grew up in New Hampshire, studied culinary arts and food service management at Johnson and Wales University in Providence, RI , worked in Boston, and had multiple stints at restaurants around New England before finally landing at a Spanish Tapas restaurant name Cava in Portsmouth, New Hampshire. There he learned about Spanish cuisine around different regions of Spain, as well as cuisines of Lebanon and North Africa.
Fortin traveled to Spain to indulge in inspiration and culture learning from the roots and brought back a better understanding of simplicity using high quality ingredients with love and creativity. In search of new inspirations and culinary knowledge, he moved to Boulder and landed at Blackbelly restaurant as a prep cook. Now, as Market chef of Blackbelly Market, Fortin is pushing boundaries while educating and feeding the community of Boulder, Colorado. He is joined by Artisan Butcher and frequent guest chef at Table, Nate Singer who will serve as his sous chef.
