Darrel Truett has been working in kitchens for twenty years, which is like two lifetimes in the restaurant business. Starting as a dishwasher, he felt drawn to the line, and once there, Truett’s inherent talent and continually developing skills were recognized. He has the distinction of having been part of the inaugural class at the Denver campus of Johnson and Wales University. Truett has worked at Barolo Grill for 11 years, which is a tenure almost unheard of at a single restaurant. He’s held the position of Executive Chef for the past 5, leading a talented team and ambitious menu that makes Barolo one of the most loved restaurants in the city of Denver. Annual trips to Italy, taken by the staff to re-energize and deepen their knowledge, fuel his passion for Italian cuisine. Truett was named Westword’s 2014 Best Chef Denver and he regularly participates in numerous charity events throughout the year benefitting the community, including Give Paws, Corks and Forks, Hot Rocks, and Chefs Up Front.
